hearty, yummy soup, especially over stale bread if you add alittle extra broth.

Recipe Ingredients for vegetable soup

4 potatoes
2 onions
2 leeks
1 head savoy cabbage
3 cups chard
3 carrots
4 stalks celery
16 oz. white beans
16 oz. cannelini
2 zucchini
28 oz. tomatoes
1 tsp salt

Recipe Directions for vegetable soup

  1. puree the beans and a few garlic cloves.

  2. saute onions leeks carrots and celery

  3. cut chard into strips

  4. chiffonade the cabbage

  5. chunk everything else

  6. add about 2-3 cups broth or vegetable base
