Just a big vat of tomato based soup- whatever veggies I have on hand. Amounts are approximate.

Recipe Ingredients for Vegetable Soup

6 cups chicken broth, fat free
60 oz diced tomatoes, canned
3 carrots
3 celery stalks
2 onions
2 lbs zucchini
6 oz tomato paste
2 tbsp olive oil
3 cloves garlic
1/4 cup corn
1/4 cup peas
1/4 cup lima beans
1/4 cup green beans
1 cup barley, cooked

Recipe Directions for Vegetable Soup

  1. Saute onion, celery, carrot, and garlic in olive oil until translucent.

  2. Add liquid.

  3. Add remaining ingredients.

  4. Simmer until grains are cooked.

  5. Top with fresh herbs (basil and oregano are especially good)

  6. If desired, blend some or all of the soup in a blender. (This makes the soup creamier and thicker).
