Recipe Ingredients for Vegetable Soup

6 c chicken stock
5 tablespoons olive oil
1 cup leeks, chopped
2 cups onions, chopped
1 cup celery, chopped
3/4 c red bell pepper, chopped
3/4 c green bell pepper, chipped
1 1/2 c yellow squash, sliced
1 1/2 c zucchini, sliced
2 c green cabbage, sliced
2 c spinach, chopped
1 tablespoon oregano
16 oz plum tomatoes, drained
16 oz dark red kidney beans, drained
2 tablespoons garlic, minced

Recipe Directions for Vegetable Soup

  1. Heat 5 T of the oil in a large skillet.

  2. Add leeks, carrots. garlic & celery and saute 10 minutes or until slightly wilted.

  3. Add the bell peppers and saute another 5 minutes.

  4. Add the squash, zucchini, and cabbage and saute another 10 minutes.

  5. Add vegetables to stock along with spinach, oregano, tomatoes & kidney beans.

  6. Season to taste

  7. Simmer for 30 minutes.

  8. Serve hot with grated parmesan.
