cabbage, potatoes and lots of curry powder

Recipe Ingredients for Vegetable soup

946 ml chicken broth, low-sodium
500 ml white wine
6 cups water
3 T olive oil
3 large onions
8 carrots
8 stalks celery
550 g red potatoes
1 head cabbage
1 1/2 cups diced tomatoes

Recipe Directions for Vegetable soup

  1. Sautee onions, then carrots, then celery in olive oil until lightly browned.

  2. Add white wine to deglaze.

  3. Add broth, water plus spices, to taste.

  4. Bring to boil, add all but tomatoes and simmer on low for 45 minutes.

  5. Add tomatoes and simmer another 10 minutes.

  6. Serve.
