Vegetable Soup Recipe

A kind of vegetable "stoup" that can be as thick or as this as you desire. I use diced tomatoes seasoned with basil, garlic and oregano for a bit of extra flavor but you can use any seasonings you like. It's very tasty and filling! I also use reduced sodium everything and this really helps cut out a lot of the sodium without altering the taste!

Recipe Ingredients for Vegetable Soup

1 lb. ground turkey, browned
14 oz can diced tomatoes
16 oz V8 juice
1 lb chick peas
8 oz can tomato sauce
1 large zucchini, diced
2 stalks celery, diced
1 small onion, diced
2 cups shredded carrots
14 oz chicken broth
2 cups water

Recipe Directions for Vegetable Soup

In a large soup pot add diced tomatoes, V8 juice, chick peas, tomato sauce, chicken broth and water. In a separate pan, brown turkey, drain any liquid and add to soup pot. Drizzle olive oil around a large frying pan and saute the vegetables until slightly tender; add to soup pot. Simmer until vegetables are finished cooking through (this also allows time for the flavors to blend!)
