Soup with various veggies and red beans

Recipe Ingredients for Vegetable Soup

2 carrots, chopped
1/2 red onion, chopped
3 cups whole canned tomatoes
1/4 head cabbage, chopped
1/2 cup green beans
1 potato, diced
3 cups tomato juice
2 stalks celery, chopped
2 cups beef broth
1/2 cup corn
1/2 cup peas
2 cups red beans
2 cloves garlic
1 tablespoon vegetable oil

Recipe Directions for Vegetable Soup

  1. Saute onions, potatoes, carrots, garlic, cabbage and celery in vegetable oil.

  2. Add broth, tomato juice, remaining vegetables and beans.

  3. Season to taste (I like to add basil, oregano, thyme, rosemary, salt and pepper)

  4. Bring to a boil. Reduce heat to med-low and simmer for 2-3 hours.
