Recipe Ingredients for Vegetable Soup

2 T olive oil
3 large onions, chopped
3 medium carrots, chopped
2 turnip, cubed
1 large sweet potato, cubed
2 cup kohlrabi, cubed
1/2 cup celery root, cubed
3 stalk celery, sliced
6 clove garlic
1 T peppercorn
1 t ginger
1 T oregano
1 T basil
2 leaves bay leaves
2 liter water

Recipe Directions for Vegetable Soup

  1. Clean and cut vegetables to bite size pieces.

  2. Place oil in large soup pot and heat. Add onions first and let brown a little

  3. Add firmer vegetables, based on how soft you want each, and allow to cook a little in oil.

  4. Add the rest of the vegetables along with the spices, stir until everything is even.

  5. Add water and bring to boil. Lower heat and simmer until vegetables are cooked to your liking. Adjust for taste.

  6. Serve with bread, pasta or rice.
