a healthy and filling soup suitable for lunch, starter or main course.

Recipe Ingredients for Vegetable Soup

1 small onion
1 small turnip
3 medium potatoes
3 carrots
2 vegetable stock cubes
1 1/2 litres of water

Recipe Directions for Vegetable Soup

  1. Chop all vegetables into small pieces.

  2. Dissolve stock cubes in boiling water.

  3. Fry onions in olive oil/low calorie spray.

  4. Add all other vegetables.

  5. Add the stock.

  6. Simmer for 30-40 minutes.

  7. Add salt and pepper to taste.
