Easy vegetable soup, excellent with orzo.

Recipe Ingredients for Vegetable Soup

2 T olive oil
2 stalks celery
2 medium onions, chopped
3 cloves garlic, chopped
1 large zucchini, chopped
1 cup mushrooms, chopped
2 cups chicken stock
28 oz tomatoes

Recipe Directions for Vegetable Soup

Heat olive oil over medium heat. Add celery, onions, and garlic, and cook until onion begins to appear translucent. Add remaining ingredients. Season with salt and pepper. Cook until the vegetables are tender.
