I just modify it so I can throw in whatever's lying around my kitchen - then I put the leftovers in containers to freeze or refrigerate for later in the week! :)

Recipe Ingredients for Vegetable Soup

2 stalks celery, sliced
1 medium white onion, diced
1 tbsp garlic, minced
14 1/2 oz. tomatoes, diced
15 1/2 oz. lentils
10 baby carrots, sliced
4 c. stock
1 tsp. salt
1 tsp. basil
1 tsp. oregano
1/2 tsp. black pepper
1 c. green beans
1 tsp. garlic powder
1 tbsp. olive oil

Recipe Directions for Vegetable Soup

  1. Sautee onion and garlic in olive oil.

  2. Add all other ingredients, then simmer until ready to eat.
