Yummy, filling, healthy vegetable soup.

Recipe Ingredients for Vegetable Soup

2 cups Fat Free Chicken Broth
3 tbsp garlic, minced
1 cup sweet onions, diced
1/2 cup celery, diced
3/4 cup carrots, diced
28 oz cannelini beans
28 oz diced tomatoes
14 oz garbanzo beans
2 zucchini, choppen
1 cup frozen corn
1 cup frozen peas
1 cup green beans, chopped
4 tbsp low-fat parmesan cheese

Recipe Directions for Vegetable Soup

  1. Saute garlic, onion, zucchini, carrots, celery until soft.

  2. Add broth, canellini beans, garbonzo beans, diced tomatoes. Bring to a boil.

  3. Turn down to simmer and add frozen peas, corn and fresh green beans.

  4. Bring to a simmer and let cook for 10 minutes.

  5. Pour into bowls and top each with 1 tablespoon low fat grated parmesan.
