A tasty soup which is very filling. I use low salt vegetable bullion to make mine, reducing the sodium content considerably. Adding barley means there is no need for a side order of bread!!

Recipe Ingredients for Vegetable Soup

400 g leek, sliced finely
400 g carrots, diced
400 g celery, diced
10 ml olive oil
1 l stock
100 g pearl barley

Recipe Directions for Vegetable Soup

  1. Soak the barley in water.

  2. Gently heat the oil in a large pan. Add the vegetables and cook for a few minutes, stirring over a gentle heat.

  3. Cover and sweat for about 10 minutes, or until the vegetables are softening.

  4. Add the stock (or water if you prefer) and the drained barley. Bring to the boil. Reduce heat and simmer for 10 minutes and serve.

  5. Can be frozen in portion sizes or kept in the fridge for several days.
