This soup resembles minestrone soup-but without the noodles.It tastes great.

Recipe Ingredients for Vegetable soup

1/4 c zucchini,chopped
20 g tomato, chopped
2 scallions, medium, chopped
1 clove garlic,chopped
20 g peppers,chopped
1/4 c butternut squash
1/2 c chickpeas
100 g celery,chopped
4 oz tomato puree
1 tsp salt
5 1/2 c water

Recipe Directions for Vegetable soup

Chop all the ingredients and put in the boiling water. Simmer for about 25 minutes, or until all the veggies are tender (chickpeas need to be cooked ahead of time, or use canned ones).
