Use the vegetables you have on hand.

Recipe Ingredients for Vegetable Soup

1 tbsp oil
1 clove garlic, diced
1/2 cup onion, chopped
1 cup potato
1 1/2 cups carrots
1/2 cup celery
1/2 cup zucchini
1/2 cup fresh corn
1 cup chickpeas, cooked
1 cup cooked brown rice
1 tsp salt
1/4 tsp pepper
1/8 tsp red pepper flakes
15 oz. diced tomatoes
22 oz water
3 tbsp fresh herbs

Recipe Directions for Vegetable Soup

Saute onion and garlic in oil. Add potato, cooking and stirring for 2 to 3 minutes. Add the rest of the ingredients plus a can and a half of water. Bring to a boil. Turn down heat, cover and simmer until veggies are done. Top each serving with asiago cheese (optional).
