Low calorie low sodium vegetable soup. Makes 24 1/2 cup servings.

Recipe Ingredients for vegetable soup

1/4 sec spray Cooking Spray
0.5 cup, chopped Carrots
0.25 cup, chopped Onions
2 cloves, raw Garlic
3 cup Light
0.25 medium head cabbage Green Cabbage
0.5 medium head Red Cabbage
1 cup Spinach
2 cup Cut Green Beans
4 cup Diced Tomatoes
2 tbsp Tomato Paste
1 tsp, leaves Basil, Dried
0.5 tsp Oregano Leaves
0.5 tsp Sea Salt
2 medium Squash, Summer, Zucchini, Includes Skin
2 cup, chopped Kale

Recipe Directions for vegetable soup

saute onion, garlic, & carrots in oil til tender. about 5 minutes. Add broth, cabbage, spinach, kale, tomatoes, green beans, tomato paste, basil, oregano, & salt. Bring to a boil, then reduce heat and simmer covered 15 minutes. Stir in Zucchini and cook another 4 minutes. Servbe Hot or Cold.
