Recipe Ingredients for Vegetable Soup

2 tbsp extra virgin olive oil
6 new potatoes, quartered
1 tbsp+chopped shallot
2 leeks, white parts only, minced
3 stalks celery, sliced
3 cloves garlic, minced
14 1/2 oz diced tomatoes
2 large carrots, diced
1 yellow squash, diced
1 zucchini, diced
1 lbs frozen mixed vegetables
2 cups vegetable broth
3 cups chicken broth
5 cups water
1 tbsp black pepper
1 tbsp white pepper
1 tbsp thyme
1/2 cup Worcestershire sauce

Recipe Directions for Vegetable Soup

  1. Heat oil in a large soup pot.

  2. Add all fresh vegetables and cook on medium-high heat until they soften.

  3. Add remaining ingredients and cook covered on medium-low heat, stirring regularly, for at least 1 hour, or until the potatoes are soft and flavors have time to develop.
