Adapted from http://allrecipes.com/Recipe/Homemade-Vegetable-Soup/Detail.aspx I used navy beans instead of great Northern beans, used all vegetable broth to make this a vegetarian soup, and added kale and more thyme than the original recipe stated. I also used packaged red cabbage, and am estimating how much of that I added. This is a full-flavored soup that is high in fiber and protein and low in sodium if you use low- or no-salt broth. It's good with or without grated parmesan cheese sprinkled on top.

Recipe Ingredients for Vegetable Soup with Navy Beans

2 cups carrots, baby, chopped
2 potatoes, baking, cut into cubes
1 onion, small, sweet, chopped
2 stalks celery, chopped
16 oz navy beans
2 cups cabbage, chopped
14 ounces diced tomatoes, canned
2 cups green beans, cut into 1/2 inch pieces
46 ounces vegetable broth
2 cups water
1 1/2 tsp dried basil
1 pinch rubbed sage
1/2 tsp dried thyme
2 cups kale, chopped

Recipe Directions for Vegetable Soup with Navy Beans

  1. Put dry navy beans in saucepan, pour four cups of water over them, heat to boiling, then remove from heat and leave covered while you chop vegetables.

  2. Chop vegetables as stated.

  3. Rinse navy beans; they should have been soaking for at least 30 minutes while you chopped veggies, and longer is certainly okay.

  4. Put everything in large pot.

  5. Bring to a boil for two minutes, then simmer for 60-90 minutes, or until vegetables are tender. (60 minutes worked for me.)
