Recipe Ingredients for Vegetable Soup - Lee's Homemade

220 g broccoli, chopped
320 g brussel sprouts, whole
560 g carrots, chopped
220 g celery, chopped
100 g leeks, chopped
200 g onions, chopped
300 g parsnips, chopped
160 g green pepper, chopped
120 g red pepper,chopped
160 g mushrooms, shataki
120 g snow peas, whole
500 ml beef broth, could not find the low sodium one & add water to cover veggies! So the sodium wil be slightly lower
1/8 cup worchestershire sauce
20 g parsley, curly approx. 1 handful

Recipe Directions for Vegetable Soup - Lee's Homemade

  1. in a large 30 cup pot add

  2. all the above vegetables

  3. broth

  4. worchestershire sauce

  5. curly parsley

  6. add salt if desired

  7. pepper

  8. garlic powder

  9. bring to a boil

  10. simmer for 1 hour

  11. makes 20 cups or 10-2 cup servings
