This is a tasty low calorie vegetable soup if you wish to exchange the chicken stock cubes with beef ones it will make a deeper flavour soup

Recipe Ingredients for Vegetable Soup Homemade

2 carrot (7-1/2") Carrots
178 grams Leeks, (Bulb And Lower Leaf-portion)
2 large Squash, Summer, Zucchini, Includes Skin
1 serving swede
2 cup, chopped Onions
1 head, small (about 4-1/2" dia) Cabbage
2 stalk, large (11"-12" long) Celery
4 Cube Chicken Stock Cubes
1 jar Passata Italian Sauce

Recipe Directions for Vegetable Soup Homemade

chop up all the vegetables except the swede unless you wish to eat the swede as well but I use this after the soup is cooked and make a mash from it. Place all the ingredients into a very large saucepan add 4 pints of water and bring to the boil and then simmer for a couple of hours on a low light tastes best the following day.
