Recipe Ingredients for Vegetable Soup (Homemade)

1 tablespoon olive oil
1 cup chopped celery
1 cup chopped carrots
1 cup chopped onions
1 cup mushrooms
1/4 teaspoon salt
1 teaspoon thyme
1 teaspoon oregano
1 cup brown rice
4 cups water
2 cups soup stock (vegetable low sodium)

Recipe Directions for Vegetable Soup (Homemade)

  1. In deep pot heat oil.

  2. Cook onions in oil until transparent.

  3. Add carrots and celery.

  4. Add soup stock, water, and spices.

  5. On a low-medium heat bring to a boil.

  6. Add tomatos, beans, and mushrooms (I drained all before adding).

  7. Bring soup back to a boil and add rice.

  8. Cook until rice in done.
