Easy to make, especially for a mid-week dinner on a cold day. Pairs great with a Grilled Cheese Sandwich.

Recipe Ingredients for Vegetable Soup in Crock-Pot

28 ounce beef stock
28 ounce crushed tomatoes
10 3/4 ounce tomato soup
4 medium potatoes, diced
16 ounces frozen mixed vegetables
1 medium onion
1 Salt and pepper to taste

Recipe Directions for Vegetable Soup in Crock-Pot

Peel and dice potatoes to one quarter inch squares (roughly). Peel and finely dice onion. Mix all ingredients in Crock Pot and cook on high for six hours.
