Vegetable soup with fresh corn and kale

Recipe Ingredients for Vegetable Soup with corn

4 serving Vegetable Cooking Stock
2 cup, chopped Kale
2 carrot Carrots
0.5 medium Onions
1 ear, large (7-3/4" to 9" long) yields Corn, Sweet, Yellow
2 stalks Celery
1 cup Rice, Brown, Medium-grain, Cooked
1 clove Garlic

Recipe Directions for Vegetable Soup with corn

  1. Saute onion and garlic until soft

  2. Add carrot and celery, cook until soft

  3. Add stock and bring to a boil

  4. Add kale, stirring in slowly

  5. Let stew for a while

  6. Add rice and cook down

  7. Add raw corn and remove from heat.

  8. Serve!
