Simple veggie soup with Butternut squash. Needs parsnips and something green.

Recipe Ingredients for Vegetable Soup with Butternut Squash

4 stalks celery
5 medium carrots
2 lbs butternut squash
2 medium onion
2 tbsp vegetable oil
6 cups low sodium chicken broth
2 cups water
1 tbsp instant bouillon
1 tbsp bay leaves
1 tsp salt
1 tsp pepper
1 tsp thyme

Recipe Directions for Vegetable Soup with Butternut Squash

heat oil, saute 1 onion till clear, add celery, saute for a moment, add carrots and garlic if desired. Saute for about 4 minutes, add squash, saute for about 3 minutes more until smells seem to blend, add broth, water, seasonings to taste. Use the instant bouillon if necessary. Simmer until veggies get tender, add 1 onion cut in 8ths, simmer till squishy. Eat.
