4 beetroots, 300 gr cabbage, 5 small potatoes, 2 large carrots, 2 small onions, red pepper, canned beans

  1. Heat olive oil in a pan.

  2. brown diced pepper, celery, onions and

  3. add shredded carrots,and beets

  4. add 2-3 tbsp of tomato paste and cook everything for 5 minutes.

  5. add 2,5 liters of water and cubed potatoes. let cook until potatoes and cabbage are soft (about 30 minutes)

  6. 5 minutes before the soup is done add canned beans and a 1cup of finely chopped dill.

  7. enjoy with or without sour cream!
