My adapted version of an old (1970s) Weight Watchers soup recipe.

Recipe Ingredients for Vegetable Soup - 1 cup per serving

1 onion
1 tsp. olive oil
2 cloves garlic
46 oz tomato juice
1 cube beef boullion
2 cups water
1 pkg onion soup mix
1 1/2 cups mixed frozen vegetables
1 cup broccoli
1 cup green beans
2 tsp. Italian herb mix
1/4 tsp. salt
1/4 tsp. freshly ground pepper or to taste
1 zucchini, cut in half lengthwise and sliced
1 Tabasco sauce - 3 drops or to taste

Recipe Directions for Vegetable Soup - 1 cup per serving

In a large stock pot, sauté sliced onion and garlic in oil until soft. Add juice, bouillon, water, onion soup mix, spices, and frozen veggies. Bring to boil and summer 10 mins. Add fresh veggies, simmer another 10 mins. Add Tabasco and adjust spices if needed.
