Use any vegetables you have on hand, - carrots, zucchini, green pepper, spinach, eggplant, broccoli, caulliflower, onion, tomato, potato - whatever you have on hand. Should total about 3/4 - 1 cup of finely chopped or shredded veggies.

Recipe Ingredients for Vegetable Souffle

3/4 cup egg beaters or 3 egg whites
1/4 teaspoon cream of tartar
1/4 cup shredded carrots
1/4 cup shredded zucchini
20 grams broccoli, finely chopped
1/4 cup green peppers, finely chopped
20 grams onion, shredded
2 tsp all purpose flour
1/4 cup almond breeze, unsweetened
1 salt, pepper, spices to taste

Recipe Directions for Vegetable Souffle

  1. Preheat oven to 350F

  2. Beat eggs with milk

  3. Gently flour & spices into milk, then stir in vegetables.

  4. Pour into greased souffle dish (or round casserole). Bake in 325 degree oven for 25-30 minutes or until a knife inserted in center comes out clean.
