Recipe Ingredients for Vegetable Sheperds Pie

2 cups cauliflower, cut into florets
1/4 cup water
2 tbsp water
1 tbsp cornstarch
1/3 cup half and half
1 tsp Splenda
3/4 tsp salt
1 dash white pepper
1/8 tsp garlic powder
1/8 tsp onion powder
1/3 cup onion, diced
1/3 green pepper, diced
1 tsp oil
5 1/3 ounces broccoli
1 1/3 carrot, diced
2 2/3 ounces Tomato Sauce No Salt Added
1 1/3 tbsp Bay Leaf
1 tsp basil
1 cup chard, swiss, chopped
2 tsp parsley
1/8 tsp paprika

Recipe Directions for Vegetable Sheperds Pie

  1. Prepare Mashed Cauliflower - this can be done the day before:

  2. Mashed Cauliflower: Place cauliflower florets into microwave-safe dish with 2 tbsp water. Cover tightly and cook on high until tender, stirring once after about 6 minutes.

  3. # Place cooked cauliflower in large bowl and mash (or use food processor or blender.) Transfer the puree to a medium saucepan.

  4. # Dissolve cornstarch in 1/4 cup water and add to cauliflower. Add half and half and remaining ingredients, stir.

  5. # Set saucepan over medium heat and cook, stirring often, for 5 - 10 minutes or until thick. Season to taste. Set aside.

  6. Preheat oven to 350 degrees.

  7. Vegetable Filling: Dice onion, pepper, carrots, and cut broccoli into flowerets and stems. Wash and trim chard and cut into bite sized pieces.

  8. Heat oil on medium heat in large skillet. Add onions and peppers and saute until onions are tender.

  9. Add broccoli, carrots, tomato sauce, bay leaf, basil and salt to taste. Blend thoroughly.

  10. Bring vegetable mixture to a boil, cover, and reduce heat to simmer. Cook until vegetables are just tender, about 15 minutes.

  11. Stir in Chard and transfer to a 13x9x2 inch baking dish.

  12. Blend parsley into the Mashed Cauliflower and spread over the top.

  13. Bake for 15 minutes, sprinnkle with paprika for color.
