Cook this ahead of time to use .25 of it in scrambled eggs for breakfast.

Recipe Ingredients for Vegetable Scramble

5 c spinach
4 large Roma tomatoes
1 c white button mushrooms
2 cloves garlic
1/4 c onions
4 T olive oil
1 T white wine vinegar or balsamic vinegar

Recipe Directions for Vegetable Scramble

  1. Saute mushrooms in 1T olive oil. Remove from heat and set aside.

  2. Chop then saute garlic, onions and tomatoes in 1T olive oil. Remove from heat and set aside. Add a splash (1T) of white wine vinegar toward end of cooking.

  3. Cook 5 cups fresh baby spinach leaves in 2T olive oil and set aside.

  4. Combine all ingredients and save in a container for use with scrambled eggs at breakfast.
