Recipe Ingredients for Vegetable and Sausage Penne

1 box Whole Grain Penne
2.5 cup Light Smart Italian Sauce
12 oz cooked Sausage
1 cup, sliced Fennel, Bulb
1 cup, chopped Peppers, Sweet, Red
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1 medium (2-1/2" dia) Onions
3 1tsp Olive Oil

Recipe Directions for Vegetable and Sausage Penne

Brown sausage. Saute onion in olive oil. Add chopped fennel, eggplant and pepper. Cook until fennel is tender. Add sausage to veggies. Add sauce and 2 cups water. Simmer for 25 minutes and then add cooked pasta.
