Recipe Ingredients for Vegetable, Sausage and Acini di Pepe Soup

8 oz. frozen spinach, thawed and drained
2 tbsp. olive oil
4 links Smart Sausages, Italian Style
2 carrots, grated
1 med. onion, chopped
5 garlic cloves, minced
1 stalk celery, chopped
28 oz. canned crushed tomatoes
6 cups chicken stock
1/2 cup acini di pepe pasta
1/2 cup fresh basil, cut in chiffonade
1 tsp. red pepper flakes
1/2 tsp. salt
1/2 tsp. black pepper

Recipe Directions for Vegetable, Sausage and Acini di Pepe Soup

Cut up sausage links and and brown in oil in soup pot. Add carrots, onion, garlic and celery and saute. Once vegetables are softened, add tomatoes, spinach and stock and simmer for 15-20 minutes. Garnish with fresh basil.
