Use whatever you have on hand. Can vary dressing ingredients, too.

Recipe Ingredients for Vegetable salad

1 cucumber
1 1/2 cups green beans
1 carrot
3/4 cup peas
1 yellow squash
1/2 cup radishes
2 tomatoes
1 cup spinach
3 cups romaine lettuce
1/4 cup white wine vinegar
1 tsp dijon mustard
1 tbsp basil
2 tbsp parsley
1/2 tsp pepper
1/2 tsp marjoram
1/2 tsp oregano
1 clove garlic
1 green onion

Recipe Directions for Vegetable salad

  1. Chop green beans. Julienne carrots. Bring a small amount of water to simmer, add green beans. Cook 4-6 minutes, add carrots, cook 2 minutes, add peas, cook another minute. Drain veggies and cool.

  2. slice cucumber very thinly. slice squash and radishes. Mix together in a large bowl. Add cooked veggies and the dressing. Serve over the greens.
