Recipe Ingredients for Vegetable Salad

0.25 cup Parsley
4 cup, pieces or slices Mushrooms
4 medium Squash, Summer, All Varieties
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 tbsp Oil Olive Extra Virgin
8 oz Tomatoes

Recipe Directions for Vegetable Salad

  1. 1/4 cup chopped fresh parsley

  2. 4 cups mushrooms cut into pieces

  3. 4 medium yellow summer squash, cut into 1/2-inch slices

  4. 2 medium bell peppers (any color), cut into 1/2-inch strips

  5. 1 tbsp olive oil

  6. 1 cup cherry tomatoes, cut into fourths

  7. Seasoning

  8. 1. Heat coals or gas grill for direct heat.

  9. 2. Brush mushrooms, summer squash and bell peppers with oil.

  10. 3. Place mushrooms, summer squash and bell peppers in grill basket (grill ?wok?) or directly on grill rack. Cover and grill over MEDIUM heat 5 to 7 minutes, shaking basket or stirring or turning vegetables occasionally, until vegetables are crisp-tender.

  11. 4. To serve, arrange mushrooms around edge of serving platter and remaining grilled vegetables in center; sprinkle with tomatoes. Sprinkle parsley. Serve at room temperature.
