Recipe Ingredients for Vegetable rolls

1 cup, strips or slices Carrots
100 grams Snow Peas
0.5 cup Coriander Leaves
50 grams Rice Paper
1 inner leaf Lettuce, Cos Or Romaine
100 grams Baked Tofu
40 grams Lime Juice
1 tbsp Fish Sauce
1 tbsp Coconut Palm Sugar
28 grams Chilli

Recipe Directions for Vegetable rolls

  1. Make Thai Dipping Sauce

  2. Combine carrot, snow peas, sprouts and coriander in medium bowl.

  3. Dip one rice paper round into bowl of warm water until soft; place on board covered with tea-towel. Top with one lettuce leaf, one tofu slice and a litte of the carrot mixture. Fold and roll to enclose filling. Repeat with remaining ingredients to make a total of 12 rolls.

  4. Serve with thai dipping sauce.

  6. Combine ingredients in small bowl.

  7. If not serving rolls immediately, place, seam-side down, on a plastic-wrap-lined tray, then cover with a damp paper towl and refrigerate until ready to serve.
