Special risotto rice is essential to get the right, creamy consistency. Use vegetable stock in place of the white wine.

Recipe Ingredients for Vegetable Risotto

6 small onions or shallots, finely chopped
2 garlic cloves, crushed
225 g mushrooms, sliced
80 g celery (2 sticks), finely chopped
1 tbsp olive oil
225 g rice, preferably arborio risotto
300 ml dry white wine
600 ml water, kept simmering
1 salt
1 pepper
225 g fresh asparagus or green beans
225 g frozen peas or broad beans
1 tsp basil or oregano or marjoram or mixed herbs
30 g Parmesan cheese, shavings to garnish

Recipe Directions for Vegetable Risotto

  1. Cook the onions, garlic, mushrooms and celery in the oil in a saucepan for 5 minutes, stirring occasionally.

  2. Add the rice and cook for 1 minute. Stir in the wine, bring to a gentle boil and cook uncovered on a low heat, until the liquid has been absorbed. Stir frequently.

  3. Continue adding warm water, one ladleful at a time, until it has all been absorbed and the rice is creamy and tender. This will take about 25 minutes. Season.

  4. Meanwhile, boil the asparagus for 6 minutes, until tender and the peas for 3-4 minutes until cooked. Drain both and keep warm.

  5. Stir the vegetables and herbs into the hot risotto and serve immediately, scattered with Parmesan shavings and garnished with fresh basil.
