Vegetable risotto with bechamel sauce

Recipe Ingredients for Vegetable risotto with asparagus and brown rice

2 cups brown rice, cooked
1 cup cauliflower, raw
3/4 cup broccoli, raw
1/2 cup carrots, raw
1/2 cup asparagus, raw
1/4 cup mushrooms, raw
1 tsp onion, chopped
1 tsp curry
1 tsp tarragon

Recipe Directions for Vegetable risotto with asparagus and brown rice

Cook the brown rice according to instructions ; reserve. Steam chopped vegetables for 15 minutes reserve. Water saute onion and mushroom ; reserve. Combine all ingredients with some vegetable cooking water and spices in an oven-proof dish ; bake in 350 F for 20 minutes.
