Vegetable Rice Paella Recipe

Mix of brown rice and veggies w/ seasonings

Recipe Ingredients for vegetable rice paella

2 cups brown rice
1 small zucchini, chopped
1/2 onion, chopped
1/2 cup cauliflower, chopped
1 teaspoon parsley
2 teaspoons olive oil
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon rosemary

Recipe Directions for vegetable rice paella

  1. chop onion, cauliflower and zucchini and add to pan w/ some olive oil and a little bit of water (1/2 cup or so)

  2. cook veggies and add seasonings in now

  3. meantime cook brown rice in separate pot (i use quick cooking) and drain

  4. add brown rice back into pan and mix

  5. serve warm
