Recipe Ingredients for Vegetable Rice Creole

1 cup White Basmati Rice
2 cup Tomatoes, Red, Ripe
1 can (303 x 406) Peas, Green
2 cup Beans, Kidney, Red, Mature Seeds, Canned
1 tsp, ground Basil, Dried
0.5 tsp Rosemary, Dried
1 dash Pepper, Black
0.33 cup, chopped Onions
0.5 cup, diced Celery

Recipe Directions for Vegetable Rice Creole

  1. Cook 1 cup dry rice but use no butter or salt.

  2. In separate pan, simmer 1/2 cup sliced onion and 1/3 cup diced celery until tender. Drain water and add 1 Tbsp oil. Saute for 1 minute.

  3. Add 2.5 cups canned tomatoes, 1 tsp basil, and 1/2 tsp rosemary. Grind peppercorns to taste. Cook for about 15 minutes, or until rice is done.

  4. Add 1 can kidney beans and 1 can peas, heat until warm.

  5. Serve tomato vegetable mixture over rice.
