Uses whatever fresh vegetables on hand. (also use 1/2 jar of spaghetti sauce, not listed on recipe ingredients).

Recipe Ingredients for Vegetable Red Sauce Pasta

1 T olive oil
15 oz stewed tomatoes
1/2 large zucchini
1/2 medium yellow squash
1/4 small yellow onion
1 c fresh spinach
2 large mushrooms
3 cups rotini

Recipe Directions for Vegetable Red Sauce Pasta

Heat oil in skillet. Place diced vegetables into heated oil. Add stewed tomatoes and 1/2 jar of spaghetti sauce. Cover and cook for 5 minutes, then remove lid to reduce. Cook another 15-20 minutes and serve over pasta.
