Recipe Ingredients for Vegetable and Red Lentil Soup

187 grams Onions
79 grams Leeks
125 grams Carrots
87 grams Green Beans
300 grams Red Peppers
64 grams Green Peppers
266 grams Zucchini
90 grams Celery
820 grams Tomatoes Canned
3 grams dried herbs
1 tablespoon lemon juice
30 grams Stock Cubes
50 grams Red Lentils

Recipe Directions for Vegetable and Red Lentil Soup

  1. Chop all the vegetables and add to a pan

  2. Add the canned tomatoes, chopped, and a can and a half of water

  3. Add the stock cubes, lemon juice, herbs, a pinch of dried chillies and a teaspoon of sweeteners.

  4. Add the red lentils

  5. Bring to the boil, then simmer for approximately 20 minutes until the vegetables and lentils are cooked

  6. Serve with crusty bread or your of bread/cracker depending on your regime.
