Quick and easy vegetable stirfry with whole grain and beans.

Recipe Ingredients for Vegetable Quinoa Stirfry

1/2 cup Onions
1/2 cup, chopped Peppers, Sweet, Red
1/2 cup Organic Quinoa
1/2 cup diced carrots
1/2 cup, diced Celery
1 serving Extra Virgin Olive Oil
3/4 cup beans
2 clove Garlic
1 cup, chopped Kale
2 tbsp vegetable broth

Recipe Directions for Vegetable Quinoa Stirfry

  1. Prepare quinoa (and chickpeas if dry) as directed on package.

  2. Saute chickpeas in light oil until lightly toasted.

  3. Saute vegetables (minus kale) until just softened, salt and pepper as desired.

  4. Add kale and broth.

  5. Cover and steam until kale starts to wilt.

  6. Combine all ingredients and season as desired.
