Recipe Ingredients for Vegetable Quinoa Bake

1 cup quinoa
2 tbsp butter
1 cup onion
3 cups broccoli
1/4 tsp salt
2 cups button mushrooms
1 cup red bell pepper
1 tsp basil pesto
2 large eggs
1 cup shredded cheese
1 cup ricotta cheese
1/2 cup light sour cream
1/4 tsp ground black pepper
1/4 cup cheddar cheese

Recipe Directions for Vegetable Quinoa Bake

  1. Cook quinoa

  2. mix all ingredients together and put into baking dish

  3. cook for 30-35 minutes at 350 degrees Fahrenheit
