makes 2 average or 1 large crustless quiche. Just spray pan well to prvent sticking.

Recipe Ingredients for vegetable quiche

6 eggs
1/2 cup eggbeaters
2 cups 1% milk
1 cup zucchini, shredded
6 oz. lowfat swiss cheese, grated
1/2 cup parmesan
1 cup onion, minced
6 cloves garlic, minced
1/8 tsp nutmeg, grated fresh
1 tsp salt
1/2 tsp white pepper
2 cups chopped broccoli
6 oz. ham, diced
3 oz. portabella mushroom
2 roma tomatoes

Recipe Directions for vegetable quiche

  1. mix all together

  2. for a lighter text remove 1/4 cup milk and add 1/4 cup sour cream. it ups the calories a bit, but makes much fluffier texture.

  3. bake for about 45 minutes at 350, or until center is nearly set. If baked until center is completely set you will push some of the water out of the eggs and make a sloppy quiche.

  4. allow to sit for 10 minutes before cutting to fully set.
