Recipe Ingredients for Vegetable Quiche Cups to Go

16 ounces frozen spinach
3/4 cup egg white
3/4 cup mozzarella cheese
1/3 cup onion
1/2 tsp garlic salt

Recipe Directions for Vegetable Quiche Cups to Go

  1. Microwave the spinach for 2.5 minutes on high. Drain the excess liquid. Line a 12-cup muffin tin with foil or silicon baking cups. Spray the cups with cooking spray.

  2. Combine all ingredients and mix well. Divide evenly between muffin cups. Bake at 350 degrees for 20 minutes until a knife inserted in the center comes out clean.
