Korean potato pancakes with extra veggies and tuna

Recipe Ingredients for Vegetable Potato Pancake

420 grams Potato, Flesh And Skin
2 serving Al Alali Tuna Slices in Sunflower Oil
25 grams Onions, Spring Or Scallions
1 pepper Peppers, Hot Chili, Green
0.33 cup Parsley
60 grams Carrots
105 grams Squash, Summer, Zucchini, Includes Skin
1/2 cup Wheat Flour, Whole-grain
2 large Egg, White
0.13 tsp Salt, Table
1/4 tsp Chili Powder
1/2 tsp Pepper, White
1/2 medium (2-1/2" dia) Onions

Recipe Directions for Vegetable Potato Pancake

  1. Chop the veggies finely beforehand.

  2. Grate the potatoes finely but not so fine that they turn mushy.

  3. Mix everything together in a bowl. The batter should be very thick. If using bacon, fry it until fat is transparent or better still, until golden brown.

  4. Heat up a non-stick frying pan.

  5. Drop a large spoonful of the batter and flatten it out into a circle about 10 cm/4" diameter for eating with your hands, smaller if serving with chopsticks.

  6. When the bottom side is golden brown, turn over.

  7. Keep flipping til dry enough. Serve.

  8. You may also bake at 375 for 20 minutes in muffin tins or on a baking tray.
