Recipe Ingredients for vegetable and potato gratin

5 tsp olive oil
2 cloves garlic
1 lb potatoes
8 oz zucchini
8 oz Roma tomatoes
1/2 tsp salt
1/2 tsp pepper
1/2 tsp ground thyme
4 oz cheddar cheese
5 oz mushrooms

Recipe Directions for vegetable and potato gratin

  1. Preheat oven to 375

  2. Slice potatoes as thin as you can.

  3. Slice zucchini pretty thin too.

  4. Slice tomatoes 1/4 inch thick.

  5. Coat pan with 1 tsp olive oil.

  6. layer first with minced garlic.

  7. Then one layer potatoes,

  8. layer tomatoes,

  9. potatoes

  10. 2oz cheddar cheese

  11. potatoes

  12. zuchinni

  13. potatoes

  14. then sprinkle remaining olive oil, thyme mushrooms and finally cheese

  15. bake covered for 35-45 minutes then uncovered for another 30 minutes.
