Hearty vegetable soup packed with goodness

Recipe Ingredients for Vegetable Potage

2 cups chicken stock
3 cups water
1 onion, chopped
4 carrots, chopped
2 celery stalks, chopped
1 red pepper, chopped
1 cup tomatoes, diced
14 oz red kidney beans
1/4 cup corn, frozen
1/4 cup peas, frozen
1/2 tsp salt
1/2 tsp pepper
1/2 tsp basil
1/2 tsp lemon juice

Recipe Directions for Vegetable Potage

  1. In a large pot, combine the water, chicken stock, vegetables and kidney beans. Bring to a boil. Add salt and pepper. Simmer, uncovered, for about half an hour or until the veggies have softened.

  2. Using a blender or hand blender, lightly puree the soup(leave some chunky parts for texture).

  3. Add the basil and lemon juice. Simmer for another minute or two. Serve.
