Vegetable Pilaf Recipe

Easy recipe. Any vegetables can be substituted.

Recipe Ingredients for Vegetable pilaf

2 medium onions
2 medium carrots
2 cups sweet potato
1 cup green peas
1 cup celery
3 cloves garlic
2 cups basmati rice
1 tsp turmeric
1000 ml chicken stock
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp olive oil

Recipe Directions for Vegetable pilaf

  1. Preheat oven to 190C

  2. Finely chop all vegetables and garlic

  3. Heat oil in large flame proof oven dish

  4. Add garlic and all vegetables except peas and stir over heat until cooked through but not brown

  5. Add chicken stock, turmeric, rice, salt and pepper and stir over heat until simmering

  6. Cover pot and place in oven

  7. Cook for 25 minutes in oven - do not remove lid at all during this time

  8. Remove from oven and fluff rice with a fork.
