Slow cooked medley of vegetables abd Rice.

Recipe Ingredients for Vegetable Pilaf

1 cup rice
1 carrot
1/2 cup green peas
2 potatoes
100 g cauliflower
1 red onion
1/4 cup extra firm tofu
1/2 cup yogurt
10 g bay leaves
1 tbsp chili powder
1 tsp salt
1 tsp coriander powder
1 tsp cumin powder
1 tsp cinnamon
2 tbsp safflower oil
1 cup mint leaves
1 cup cilantro
1/4 cup cashew

Recipe Directions for Vegetable Pilaf

  1. Heat oil in a pan

  2. Add bay leaf, red onions and salt.

  3. After a minute add all the vegetables.

  4. Add mint and cilantro

  5. Add all the spices.

  6. Add yogurt

  7. Add Tofu

  8. Slow cook the vegetables with rice in a rice cooker.

  9. Garnish with cashew and cilantro
