Cooked vegetables & tofu with a spaghetti crust, topped with mozzarella cheese and parsley

Recipe Ingredients for Vegetable pie

1/2 lb spaghetti
1 cup mozzarella
1 1/2 cup portabella mushroom
1/2 green bell pepper
1 small onion
2 cloves garlic
1 cup broccoli
12 oz tomato sauce
1 cup tofu
1/2 cup flat leaf parsley

Recipe Directions for Vegetable pie

  1. Prehead oven to 375 degrees.

  2. Cook spaghetti, grease pie pan and arrange spaghetti to be the pie crust

  3. Saute onion, garlic, mushrooms & pepper - about 5 mins. Add tomato sauce, broccoli and tofu and simmer until the consistency thickens. The less watery the better.

  4. Spread vegetable & tofu mixture over spaghetti in pie dish. Top with cheese and parsley, then bake for about 20-25 minutes. Let stand for a bit, then cut into 6 sections.
