Veggies on the bottom, whipped potatoes on the top. Freezes well.

Recipe Ingredients for Vegetable Pie

2 cups broccoli
1 cup onions
1 cup mushrooms
1 cup carrots
1/2 cup parsnips
1 1/2 cup cauliflower
2 cups zucchini
6 cups potatoes
1 cup soymilk
2 tablespoons butter
1 1/2 tsp salt
1 tablespoon Soy Sauce

Recipe Directions for Vegetable Pie

  1. Dice and steam potatoes

  2. cook carrots, broccoli and cauliflower in a dutch oven with just enough water to steam the veggies.

  3. carmelize onions and mushrooms. When they are ready, add to dutch oven.

  4. When carrots are soft, add remaining veggies

  5. When potatoes are ready, whip with soymilk and butter using an electric mixer

  6. Dish veggies into a bowl. Place potatoes on top.
